This veggie club sandwich is made with the freshest ingredients, and it’s not only delicious but it’s also super healthy! Takes just 10 minutes to prepare and contains smashed avocado!
Did you also grow up thinking that a sandwich must contain dairy or meat otherwise it’s not filling? I grew up believing that I needed to eat animal products at every meal otherwise I won’t be healthy, or believing that plant based meals can’t fill me up. Until very recently when I started incorporating more and more plants into our diet, and I finally realised that plant based meals can be so nutritious, filling and delicious.
This is when I started making veggie or vegan sandwiches, and really enjoying them.
THE ULTIMATE VEGGIE CLUBHOUSE SANDWICH
We stopped eating processed meats a long time ago, but as I really miss indulging on a really good club sandwich I decided to create a healthy vegan version of my own.
I still haven’t visited a restaurant where I could find a club sandwich on the menu that does not contain bacon or any other kind of processed meats. So instead, I created this recipe and make it for my kids when we’re out on road trips or just on regular days when we’re at home and I don’t feel like cooking.
This sandwich is 100% healthy especially if you use whole grain bread (with seeds!)
VEGGIE CLUB SANDWICH RECIPE – STEP BY STEP TUTORIAL
When it comes to club sandwich fillings, the possibilities are endless. But below I’m going to show you my favourites!
Think about all the layers that you will be creating, I love it when my food is colourful so I try to create as many colourful layers as possible.
Here’s how I make my favourite veggie club sandwich:
Step 1. Toast your bread slices in the toaster! I know not everyone likes toasted bread, but this is one of my favourite things about this recipe especially if the sandwich enjoyed warm.
Step 2. Spread a thin layer of cream cheese. For vegan version, use cashew cream cheese spread. Season with freshly gound black pepper.
Step 3. Lay out some baby spinach leaves or any other dark leafy greens that you have on hand. I also like using baby rocket/rucola leaves.
Step 4. Slice some tomatoes, and laye with tomato slices. Add a pinch of salt if you like.
Step 5. Add red onion rings.
Step 6. Smash a ripe avocado in a bowl, add freshly squeezed lemon juice with a pinch of salt. Give the mixture a mix and layer it over the onion rings.
Step 7. Seal the first part with a slice of toasted bread. Repeat the above steps to create more layers. Serve immedietly!

Veggie Club Sandwich
- 3 slices whole grain seeded bread
- 2 tbsp cream cheese vegan cashew or dairy cream cheese
- 12 baby spinach leaves
- 1/2 tomato
- 1/4 red onion
- 1 avocado
- 1 tsp lemon juice
- 1/2 tsp salt
- 1/8 tsp ground black pepper
- 1 tsp watercress
Toast the bread slices.
On the toast, spread a layer of cream cheese. Then lay over baby spinach leaves, followed by tomato slices, and sliced onion.
Smash an avocado, add lemon juice, salt and pepper and mix.
Spread a layer of the avocado mixture over the onion rings.
Repeat the above steps again, and serve immediately.
