When I was a kid, I was able to tell that we are having this amazingly delicious cucumber and tomato salad just upon stepping into the door of our house. It smells so fresh that you can’t go wrong in being able to identify it.
How to make this simple cucumber and tomato salad
This salad is so easy to make as all what you need are cucumbers, tomatoes, and any fresh herbs that you have in your kitchen. I added parsley and green onions. Fresh oregano and thyme would work as well. The dressing to this salad is very simple too. It consists of olive oil, a squeeze of lemon and a pinch of salt.
Cucumber and tomato salad goes well with any kind of meat or a vegetarian dish. It is also well-known in the Middle Eastern Cuisine, as it accompanies many of its dishes. Cucumber and tomato salad goes very well with many Middle Eastern rice-based-meal, such as maglobeh (the upside-down rice dish), mjaddarah, uzi, shwarmah, falafel, or even as part of a varied mezza. It is full of vitamins and low in calories. Yet, eating a medium size bowl of it makes me feel full, not mentioning if it is consumed as a side dish to which it adds all the healthy benefits and freshness of tasty vegetables.

Simple Cucumber and Tomato Salad
- 2 cucumbers diced
- 2 tomatoes diced
- parsley finely chopped
- green onion thinly sliced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
Combine cucumbers and tomatoes in a serving bowl.
Pour over olive oil and freshly squeezed lemon juice. Gently toss to coat and evenly distribute ingredients.
Season to taste with salt.
Sprinkle with greenery and serve immediately or refrigerate until ready to serve.
